Strata Private Dining was created from a career spent around the table and behind the pass. Chef Anthony Schafer began working in professional kitchens at fourteen and became an Executive Chef at twenty-two, building his career through restaurants, resorts, banquets, and high-level culinary teams across the West. His experience includes time with Jaleo in Las Vegas, along with years leading kitchens and developing dining concepts throughout the region.

After making Southern Utah home, Anthony saw an opportunity to bring the detail and hospitality of a chef-driven restaurant directly to people’s homes, vacation rentals, weddings, and celebrations. Strata was built around that idea: thoughtful seasonal food, genuine hospitality, and menus created specifically for the people gathered around the table.

Today, Strata Private Dining serves St. George, Greater Zion, and destinations throughout Southern Utah, creating intimate private dinners, catered events, and weddings inspired by the landscape and ingredients of the region.

Menus are built around the season, the occasion, and the people at the table, with each course designed to feel intentional without ever feeling forced.

Strata is built around warm, personal hospitality—creating restaurant-level experiences that still feel relaxed, comfortable, and completely your own. Meet Chef Anthony Schafer

I’ve spent most of my life in kitchens. I started cooking professionally at fourteen and became an Executive Chef at twenty-two, building my career through restaurants, resorts, banquets, and chef-driven concepts across the West. Along the way, I’ve had the opportunity to work with incredible teams, including Jaleo in Las Vegas, lead high-volume culinary operations, compete in food and wine events, and become a Certified Sommelier through the Court of Master Sommeliers.

What I’ve always loved most about hospitality, though, is the connection that happens around a table. Strata gives me the opportunity to take everything I’ve learned in restaurants and create something more personal—menus built around the people I’m cooking for, the occasion they’re celebrating, and the landscape we get to call home.

My goal is simple: cook food with intention, take care of people well, and create an experience they’ll remember long after the last course is served.
